I Spend limit approximately $100. They should be over-ear design with
good isolation, and faithful, transparent sound. I'll be wearing them
for tracking in a bedroom setting.

I did a quick search and was looking at Sennheiser HD 280 Pro and
Sony 7506. Product searches like this quickly blow up with hundreds
of possibilities, so I thought I'd ask hear to see if there is an
    SM57 of headphones.

    Thanks,

    Toby

Sony 7506 is screechy and boomy and unpleasant to listen to for long
periods, but that actually is an advantage for tracking. I would try
it. It is something of an industry standard.

The Beyer DT150 has a little lower leakage, and is more pleasant to
listen to, but it's a little more money and weighs a bit more. It also
is kind of an industry standard.

MDR-7506 - tiring to listening to.
    Audio Technica ATH-M50X.
Beyer DT770 / 880 (more expensive, good sound, very comfortable)
AA Hi-X60 (dearer still, but last forever).

    Agreed.

    Audio Technica ATH-M50X.

This is what I still use. You can get replcement headband covers and ear
pads for them. Beware the M70x, which is way out of the price range here
but deserves a mention because despite its overall slightly cleaner sound
and more accurate bottom end, the hinges that attach the earpieces to the headband will crack, for sure, rendering it useless. There is certainly
no shortage of repair advice on Google, but hey -- you know..

I ended up cheaping out, and got these:

    https://www.amazon.com/dp/B0DNLXX6JQ?ref=ppx_yo2ov_dt_b_fed_asin_title&th=1

The isolation is surprisingly good, and they are quite comfortable.
The fidelity seems fine, though I suspect a boost in the mid-highs.
They don't have exaggerated bass and otherwise fit my purpose well.
